Lemon Buttercream Icing

- 6 cups powdered sugar
- 1 cup butter (softened)
- 1/4 cup fresh lemon juice
- 1 tsp lemon extract (not oil)
- zest of one lemon
Sift powdered sugar (you can also mix it with an electric mixer to break up clumps instead of sifting).
Using an electric mixer, beat the softened butter into the powdered sugar. Mix on low speed until combined.
Add the lemon extract, lemon juice, and lemon zest. Mix on medium speed for about 2 minutes.
